OLIVE GROVES and DRY WALLS
THE HINTERLAND OF THE RIVIERA AND ITS MAGICAL GOLD
In the small, enchanting village of Lavina, a hamlet in the municipality of Rezzo, along the dry stone walls, at about 600 meters above sea level, we find our Taggiasca olive groves, which were cultivated by grandfather Guido.
When we talk about dry stone walls, we're talking about a type of agricultural and historical architecture listed as a UNESCO World Heritage Site. This technique, which does not require the use of binders or mortars, allows terraces to be restored on even very steep and rugged hills, thus increasing agricultural production.
From our olive groves, we obtain Taggiasca variety Extra Virgin Olive Oil, a typical quality of the area,
especially in western Liguria.
The EVO oil obtained, very delicate and precious, golden yellow in colour, has an intense and fruity aroma.
with a light and sweet taste.
